Hot Dog Cookies

Hotdog Cookies
Here’s a recipe for molded short bread cookies in the shape of hot-dogs. Because the only thing better than a Fourth of July cook-out is Fourth of July desserts^^

1 cup butter, softened
1/2 cup confectioner’s sugar
pinch of salt
2 1/2 cups flour
1 teaspoon vanilla

1 cup confectioner’s sugar
1 Tablespoon lemon juice or milk

red, yellow, and green food coloring
1/2 cup coconut flakes
pinch of cinnamon

1, Cream butter, salt, and confectioner’s sugar

2, Beat in flour and vanilla

3, Tint about 1 cup of the dough with 8 drops red and one drop yellow food coloring. Increase colors if needed.

4, Roll plain dough into 20-24 small logs, then press through the middle with a knife as shown

5, Roll an equal number of thin logs with the red dough and place in the centers of the “rolls” for the hot dogs.

6, Score the tops lightly for grill marks, bake for 12-15 minutes, and allow to cool. Meanwhile blend all ingredients for the glaze.

7, Tint the coconut and part of the glaze with green food coloring. The rest of the glaze should be yellow; add a pinch of cinnamon for the spices found in mustard.

8, Pipe a bit of the green glaze on either side of the hot dogs, and adhere the coconut on for relish.

9, Pipe the yellow on for the mustard. Allow cookies to dry about an hour before serving. Makes 20-24 cookies.
